It's Burger Time!


Just because we're vegetarians doesn't mean we don't indulge in a good burger from time to time. Ours just happen to be made of beans instead of beef. I found a vegan black bean burger recipe at the Daily Garnish, but we tweaked it a bit based on what we had in the kitchen. These were nummy num, but maybe just a tiny bit too cinnamony (yep, cinnamony). Auntie K has been visiting for over a week and she made these, while I made the potato fries to go with them.

The Recipe: Vegan Black Bean Burgers

What you need:
2 3/4 cups precooked black beans (you can use canned too if you want)
2 small grated carrots
1/2 cup oats
1/4 cup walnuts
1 tbsp olive oil
1/2 tsp cinnamon
1/2 tsp coriander
1/2 tsp garlic salt
1 tsp kick n' chicken (Webster spice)
1/2 tsp chili powder
1/4 tsp cayenne pepper
1/2 tsp sea salt
1/2 cup whole wheat flour

Preheat oven to 350 degrees. Place oats and walnuts in a food processor until chopped, but chunky. Add grated carrots and mix for 5 seconds. Add 3/4 of the beans, spices and olive oil. Process for about 20 secs until well blended.

Place mixture in a large mixing bowl and add the rest of the beans (whole). Pour 1/2 cup of ww flour into mixture and mold into 6 patties. Flatten and place on a baking sheet. Bake at 350 degrees for 40 to 45 minutes. Flip after 20 minutes. Emily @ Daily Garnish also said you could grill them, but we didn't have time after our potatoes were finished.

I checked on the patties every 10 mins (because I was checking the potatoes) and they needed a few more minutes to get thoroughly cooked. We added whole wheat flour because our patties were a little too wet and the flour really helped.

We paired them with these potatoes (except this time I cut them into fry pieces instead of chunks), topped them with fresh spinach from our garden and our meal was SUPER yummy! We even made Sweet P a mini burger with a whole wheat bagel as a bun!
