Banana Muffins


I made these for a playdate one morning (and left one behind for the starving Farmer) since we had an overabundance of bananas. When the Farmer's soccer team goes on trips, he brings home LOTS of bananas. This time is was about 3 dozen (not kidding). We dehydrated most of those, but let about 10 get nice and brown. And these muffins were born.

The Recipe: Banana Muffins

What you need:
3 to 4 overripe bananas
1/2 c sugar
1/3 c melted butter
1 egg
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1 1/4 c whole wheat flour
1/2 c rolled oats
1/3 c walnuts or pecans (optional)

Preheat oven to 350 degrees.

Mash bananas in a large bowl. Add sugar, melted butter and the egg and mix until combined. Mix in cinnamon, baking soda, baking powder, flour, oats and nuts until moistened. Pour mixture into well-greased muffin tin.

Bake for 20 to 25 minutes or until toothpick comes out clean. Makes 12 regular, 36 mini or 6 large muffins. YUM!

**I used 4 bananas. This makes them very moist (and I don't know about you, but I don't like dry muffins). I also used only 1/3 c sugar and 1/4 c of butter because that's all I had in the house! They turned out great and I'm all for less sugar and fat in a muffin. I also didn't have any nuts, but am pretty sure they would have been AMAZING if I did. These are SUPER easy and quick. They taste great with butter or cream cheese.
